It’s hard to imagine improving on a moist and tender coffee cake with a sweet crumb topping, but when fresh strawberries are added to the batter, this dessert favorite takes on a whole new look and taste. The recipe for this cake is an easy and delicious way to enjoy fresh spring strawberries when they are in season. It is topped with a buttery crumb that can be made with or without chopped pecans or walnuts.
Ingredients
-
1 cup sifted all-purpose flour
-
1/2 cup granulated sugar
-
2 teaspoons baking powder
-
1/2 teaspoon salt
-
1/2 cup milk
-
1 large egg
-
2 tablespoons unsalted butter, melted
-
1 1/2 cups sliced fresh strawberries
For the Crumb Topping:
-
1/2 cup all-purpose flour
-
1/2 cup granulated sugar
-
1/4 cup (4 tablespoons) unsalted butter
-
1/2 cup chopped pecans, or walnuts, optional
Steps to Make It
-
Heat the oven to 350 F. Grease and flour an 8-inch-square baking pan.
-
In a bowl, combine the sifted flour, sugar, baking powder, and salt. Stir to blend thoroughly.
-
In a separate mixing bowl, whisk the milk with the egg and melted butter. Add the dry mixture and beat for 2 minutes.
-
Spoon the batter into the prepared baking pan and spread evenly. Top with the sliced strawberries.
-
Make the crumb topping: In a bowl, combine the flour and sugar; cut in the butter until mixture resembles coarse crumbs. Add chopped pecans or walnuts, if using.
-
Sprinkle the crumb topping mixture over the strawberries.
-
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
What Does «Cut In» Mean?
Many baking recipes—such as for pastry, biscuits, and crumb topping—call for "cutting in the butter." This is a technique of incorporating the butter into the flour and other dry ingredients while keeping small pieces of whole butter. That way, the butter is evenly distributed, and while the dish bakes, the butter melts and creates a layer of fat making for a flaky and rich tasting dessert.
