Unicorn treats may feel like a fad, but they’re also just fun to serve and fun to eat. Who doesn’t want to eat the rainbow? They’re also easy to make with a good set of food coloring, some sprinkles, and a few bowls. These unicorn Rice Krispies are sure to make kids of all ages smile.
Rice cereal treats—one of the easiest desserts in the world to make—are also easy to render in unicorn style. Tinted white chocolate is used here, but you could also top the treats with buttercream frosting or a simple icing. Just don’t forget a variety of special sprinkles and edible glitters you can find in many craft stores and cake supply shops. Go ahead with the standard recipe, or mix it up by using other cereals like Fruity Pebbles, chocolate Rice Krispies, or even Cheerios. Try mixing in pretzel rods or candies.

6 cups (160 grams) Rice Krispies cereal

1 stick (4 ounces) unsalted butter

10 ounces marshmallows

1/4 teaspoon kosher salt

6 ounces white chocolate (melting wafers)

Steps to Make It

Gather the ingredients.

Line an 8 x 8 x 2-inch pan with parchment paper.

Add the cereal to a large mixing bowl.

Melt the butter in a medium heavy-bottomed saucepan over medium heat.

When the butter has entirely melted and the foam subsides, remove from heat. Add the marshmallows. Stir the mixture until melted. If you need a little extra heat, go ahead and put the pot back on over a low flame until the marshmallows have fully melted.

Add the marshmallow to the cereal and sprinkle the salt on top. Fold the melted marshmallow and cereal together to incorporate.

Press the mixture into the prepared pan.

Melt the white chocolate pieces according to the instructions on the bag. Microwaving in one minute increments on medium power and stirring until melted is the fasted method, though a double-boiler will also work.

Divide the melted chocolate into small bowls (one bowl for each color) and add food coloring as desired. Be sure to use very small amounts of food coloring. You can always add more for a darker color.

Frost the Rice Krispie treats with the tinted white chocolate. Add spoonfuls of each color and carefully swirl using a butter knife or wooden skewer. Avoid over-mixing to keep the colors distinct. Drizzle more of various colors on top if desired.

Decorate with sprinkles and/or colored chocolate. Let cool until firm.

Remove the treats from the pan and cut into squares of your preferred size. Serve immediately.
