Imagine everything you love about a chocolate covered strawberry in the form of a brownie! You will swoon for the chopped fresh spring berries in every bite. To make these brownies just as elegant as a chocolate-covered strawberry, you can even drizzle some beautiful melted white chocolate on top.

Ingredients

  • 3/4 cup unsalted butter, melted

  • 1 1/2 cups granulated sugar

  • 1 1/2 teaspoons vanilla extract

  • 3 large eggs

  • 3/4 cup all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup coarsely chopped fresh strawberries

  • 2 ounces chopped white chocolate

Steps to Make It

  1. Gather the ingredients. Heat the oven to 350 F. Grease an 8-inch square baking pan and set aside.

  2. In a large bowl, combine the melted butter, sugar and vanilla extract.

  3. Add the eggs and beat well to combine.

  4. In another large bowl combine the flour, unsweetened cocoa powder, baking powder, and salt.

  5. Gradually add the flour mixture to the egg mixture, beating until well blended.

  6. Spread the brownie batter evenly into the prepared baking pan.

  7. Sprinkle the chopped fresh strawberries evenly on top of the batter. Bake for 40 to 45 minutes or until brownies begin to pull away from sides of pan.

  8. Cool completely in the pan on a wire rack.

  9. Once cooled, melt the white chocolate and drizzle over the brownies.

Tip

There are two easy methods for melting chocolate. On the stovetop or in the microwave. Both methods work well to avoid any clumps in the melted chocolate but without scorching. Either way the result will be smooth and glossy, ready to drizzle, dip, pour or dunk!

  • Place chopped chocolate in the top of a double boiler of simmering (not boiling) water. Cook the chocolate, stirring occasionally, until melted. Depending on the amount of chocolate, it will take about 2 to 3 minutes. If you don’t have a double boiler, you can create your own by placing a heatproof bowl set over (but not in) a saucepan of simmering water. It works just as well and you don’t need any special equipment.
  • Alternately, you can place the chopped chocolate in a microwave-safe bowl and microwave in 30-second intervals. Stir the chocolate between each interval until melted.

Remember when melting chocolate, it is best to chop bars into small, uniform sized pieces to ensure that the chocolate will melt evenly. Or just opt for chocolate chips. They are the ideal size for melting. Also, be sure to wipe down your equipment before melting chocolate because moisture will affect the final result. You don't want to get any drops of water into the melted chocolate. If you are melting chocolate for dipping fruit, be sure to pat it dry before dipping it into the chocolate as well. Finally, remember that high heat will scorch chocolate. Always opt for lower heat and slower melting.

Recipe Variation

  • White chocolate makes for beautiful contrast in presentation, but milk or dark chocolate also taste great drizzled over these brownies!
