One of the most popular Girl Scout cookie offerings is the S'mores cookie—crunchy graham sandwich cookies with creamy chocolate and marshmallow filling.

This recipe for Girl Scout Cookies s’mores bars is twice the s’mores goodness in every bite. The recipe starts with a homemade brownie batter as the base. After the brownies are baked they are topped with graham cracker crumbs and the Girl Scout S’mores cookies are pressed into the warm baked brownies. Next, the brownies are topped with pieces of chocolate bars and sprinkled with mini marshmallows. The marshmallows can be toasted with a kitchen torch (with parental supervision, of course) or baked in the oven a few minutes until golden brown. If you love s’mores, this recipe is twice the fun!

Ingredients

  • 4 ounces (1/2 cup) unsalted butter

  • 1/2 cup unsweetened cocoa powder

  • 1 cup light brown sugar, packed

  • 1/2 cup all-purpose flour

  • 1/2 cup milk

  • 1 large egg, lightly beaten

  • 1 teaspoon pure vanilla extract

  • 2 tablespoons graham cracker crumbs

  • 9 Girl Scout S’mores Cookies

  • 1 (1.55-ounce) chocolate bar

  • 1 cup mini marshmallows

Steps to Make It

  1. Gather the ingredients. Preheat oven to 350 degrees. Line an 8-inch square pan with non-stick foil and set aside.

  2. In a medium saucepan, place the butter and unsweetened cocoa powder. Heat over low, stirring constantly, until butter has melted and the mixture is smooth.

  3. Remove from the heat and stir in the brown sugar, flour, milk, egg, and vanilla extract until combined.

  4. Spread the mixture evenly into the prepared pan. Bake until a toothpick inserted in center comes out clean, 25 to 30 minutes.

  5. Remove the pan from oven. Sprinkle the top evenly with the graham cracker crumbs. Break the chocolate bar into pieces and cut the Girl Scout S’mores cookies in half. Press both lightly into the warm brownies.

Tip

By lining a pan with non-stick foil, you are creating easy "handles" to pick up the baked and cooled bars and lift them from the pan. The bars can then be transferred to a cutting board for neat, even slicing. If you don't have any non-stick foil, parchment paper also works well. Of course, you can always grease the pan with butter or baking spray and cut the bars directly from the baking pan as well.
