This beautiful Thai fruit salad recipe is a taste of paradise. Tropical fruit is tossed together in a sweet coconut-lime fruit salad dressing that enhances but never overwhelms the luscious taste of the fruit. You can also make it with a combination of tropical and local fruit.
Choose your own combination of fruit for this easy, fresh fruit salad. If you are making it for a party, consider serving your fruit salad in a pineapple boat for a great presentation that will have the other guests envious. Some tropical fruit, such as star fruit, add an extra visual punch.
Ingredients

1 cup pineapple cubes, fresh, canned, or frozen

1 banana, sliced

1 cup mango, peeled and cubed, use frozen if fresh, ripe mangoes are unavailable

1 cup lychee fruit, if using canned, discard the liquid

1 star fruit, peeled and sliced

1 to 2 cups strawberries
For the Dressing:

1/4 cup coconut milk

1 tablespoon lime juice, freshly squeezed

2 to 3 tablespoons sugar, to taste
Steps to Make It

Stir the Dressing ingredients (coconut milk, lime juice, sugar) together in a cup until sugar dissolves.

Place all fresh fruit in a mixing bowl. Pour the dressing over the fruit and toss well to mix.

Garnish just before serving with a star fruit slice.

Refrigerate if you are not serving immediately.
Tip
- To keep starfruit from going brown after slicing, simply drizzle it with some fresh lime or lemon juice.
