Mornings just got so much more delicious with this creamy avocado and chorizo breakfast grilled cheese. Cheesy scrambled eggs, creamy avocado, crispy chorizo, buttery Muenster, and sharp white cheddar are piled high and then grilled between two thick pieces of white bread. The crisp exterior is the perfect envelope to the creamy, crispy and gooey interior.
Don't like chorizo? Don't worry! You could swap it out for crispy bacon or mojo pork. Or if you're vegetarian, leave it out or replace it with fresh spinach or caramelized onions. Whatever way you spin it, you know your morning will be extra delicious if you start it out like this!
Ingredients
For the Cheesy Scramble:

2 large organic eggs

3 dashes hot sauce

1/2 tablespoon salted butter

2 tablespoons shredded sharp cheddar
For the Sandwich:

1/3 cup chorizo

2 slices thick-cut white bread

2 slices Muenster cheese

1/2 avocado, sliced
-
2 slices white cheddar, or Asiago cheese

1/2 tablespoon salted butter
Steps to Make It
Make the Cheesy Scramble

Gather the ingredients.

Crack the eggs into a small bowl. Add a few dashes of hot sauce and vigorously whisk until smooth and fluffy.

Heat a small nonstick pan to medium heat and add butter. Once the butter bubbles, add the whisked eggs and continuously stir until the eggs start to stiffen in a custard-like manner.

Add the cheese, turn off the heat, and place the eggs on top. After a minute, mix the melted cheese from the bottom of the pan into the scramble and set aside.
Make the Sandwich

Heat a frying pan over high heat and cook the chorizo, occasionally stirring, until the meat is crisp and browned. Remove from heat set aside.

Take one slice of bread and add two slices of Muenster cheese, then add the cheesy scrambled eggs, the crispy chorizo, the avocado, and the other two slices of white cheddar or Asiago. Add the top piece of bread and butter the exterior of the sandwich.

Add your buttered grilled cheese to either a panini press or to a heated frying pan over medium heat and let the sandwich cook on both sides until all the cheese has melted and the exterior of the sandwich is golden and crispy. Remove from heat and serve immediately.
