Recipe Variations
This recipe is grain free, but uses dairy ingredients. If you prefer a non-dairy option, use melted coconut oil instead of butter. As a substitute for the 2 eggs, mix 2 tablespoons of flaxseed meal into 1/3 cup water and allow it to thicken for 5 minutes. Then, combine the flaxseed mixture into the recipe. The combination of flaxseeds and water acts as a non-dairy alternative to eggs as the binding agent in baked goods.
This recipe calls for 1/2 cup of semisweet chocolate chips for added texture and interest. These can be omitted or 1/2 cup of your favorite chopped nuts can be used instead.
What Is Almond Flour?
Almond flour is frequently used by those following a paleo diet and is available in most large grocery stores as blanched almond flour or whole almond flour.
Blanched almond flour is made from ground whole, sweet almonds. The almonds are blanched to remove the skin and then they are ground to a fine texture that makes them ideal for baking a wide variety of gluten-free, low carb, and grain-free baked goods.
Whole almond flour is ground from whole almonds with the skin still intact. It also makes a great addition to grain-free recipes.
Almond flour should be kept in the refrigerator or freezer to maintain optimum freshness. the natural oils in the nuts can spoil when kept at room temperature for extended periods of time.
