Air fryer potato chips are crispy, crunchy and it’s hard to believe they are cooked in the air fryer. Very little oil is used to make these chips, and a 2-cup serving comes in at just 7 grams of fat. It takes a little effort to make a good-sized batch but it’s so worth it. Pair it with a delicious dip like homemade French onion dip or cheeseburger dip.

“Homemade air-fried potato chips take an incredibly greasy and fattening snack and make it a much healthier option. I recommend making longer chips and pairing them with a favorite dip.” —Noah Velush-Rogers

A Note From Our Recipe Tester

Ingredients

  • 2 large russet potatoes

  • 1 tablespoon olive oil, or canola or olive oil cooking spray

  • 1 teaspoon kosher salt

Steps to Make It

  1. Gather the ingredients.

  2. Scrub the potatoes thoroughly. There is no need to peel the potatoes.

Use a mandolin at the 1/8-inch setting or a vegetable peeler to slice the potatoes very thinly. You can slice lengthwise for long chips or crosswise for a more classic chip shape.

  3. As you slice the potatoes, immediately submerge them in a bowl of very cold water. Let them sit in the cold water for at least 20 minutes. This removes the starch from the potatoes so they can crisp properly. It also prevents oxidation.

  4. Remove the potatoes from the cold water. Rinse with more cold water, then place in a single layer on a paper towel-lined baking sheet. Pat dry with more paper towels until they are as dry as possible.

  5. Add the dried potato slices to a large bowl. Drizzle with the oil or cooking spray and toss to coat. Preheat the air fryer to 350 F.

  6. Add the potato slices to the basket of the air fryer in one even layer without too much overlap. Air fry at 350 F for 10 minutes.

  7. Separate the potato slices and flip them if needed. If the potatoes aren't golden and crisp, raise the air fryer temperature to 400 F and continue air frying until crispy on both sides and light golden brown, 3 to 5 minutes more.

Remove from the air fryer and sprinkle with salt immediately. Repeat again with any remaining potato slices.

Recipe Tips

  • The potatoes must be as dry as possible before air frying.
  • Heating at a lower temperature first for a longer period of time helps to properly cook the potato slices, and may also crisp them. The second air frying stage at a higher temperature may be needed to crisp and brown the potatoes. If you cook at a higher temperature from the beginning, it’s more likely that the chips will not be as crispy and will burn more easily.

Recipe Variations

  • You can use Yukon Gold potatoes, which also work well.
  • Top with chopped chives or parsley if you wish.
