The Pizookie is a deep-dish skillet cookie made famous by BJ’s Restaurant and Brewhouse. If you can’t get to a BJ’s restaurant, you can make a delicious copycat Pizookie in your own kitchen. This version is made with a buttery brown sugar and chocolate chip cookie dough and it is super-easy to prepare. You won’t even need an electric mixer for this yummy treat—just melt the butter and combine the ingredients and your Pizookie is ready to bake.

Bake the Pizookie in an 8-inch cast-iron skillet or bake it in a 6-inch or 7-inch round baking pan or deep dish pizza pan. Top the dessert off with a few scoops of vanilla ice cream and a drizzle of chocolate or caramel sauce if you like. Dig into the warm Pizookie with spoons or let it cool completely for easy slicing. Whether warm or cold, this treat is sure to be a hit.

Ingredients

  • 3 ounces all purpose flour (2/3 cup)

  • 1/4 teaspoon baking soda

  • 1/8 tsp baking powder

  • 1/4 teaspoon salt

  • 6 tablespoons melted unsalted butter

  • 1/3 cup packed brown sugar

  • 1/3 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips (or chunks)

  • 1 cup vanilla ice cream (2 to 3 scoops)

  • 2 tablespoons chocolate sauce  (or caramel sauce)

Steps to Make It

  1. Gather the ingredients.

  2. Preheat the oven to 350 F and grease an 8-inch cast-iron skillet and line with parchment paper, if desired. Alternatively, prepare a 6-inch or 7-inch round cake pan.

  3. In a small bowl, combine the flour, baking soda, baking powder, and salt; stir or whisk to blend and set aside.

  4. In a medium bowl, combine the melted butter with the brown sugar and granulated sugar; whisk thoroughly.

  5. Whisk in the egg and vanilla and continue to whisk until smooth and well blended.

  6. Add the flour mixture and stir until blended.

  7. Fold the chocolate chips into the batter.

  8. Spread the dough in the prepared pan.

  9. Bake in the preheated oven for about 21 to 24 minutes, or until lightly browned and just firm in the center. Remove the pan to a rack and let the Pizookie cool slightly.

  10. To serve, top the warm Pizookie with a few scoops of ice cream and drizzle with ice cream topping or syrup if desired.

How to Store and Freeze

  • Slice and store leftover Pizookie in an airtight container at room temperature for up to 3 days or in the fridge for up to 6 days.
  • To freeze, put a whole Pizookie or individual wedges in an airtight container or freezer bag. Freeze for up to 3 months.

Recipe Variations

  • Swap out the chocolate chips with white chocolate chips, peanut butter chips, or toffee chips. Or replace the chips with pieces of your favorite candy bar, M&M’s, or Reese’s Pieces.
  • Brown the butter for a toasty, slightly nutty flavor.
  • Add about 1/3 cup of chopped pecans or walnuts to the cookie dough.
  • For a semi-homemade Pizookie, skip the homemade dough and use about 1 pound of refrigerated cookie dough. Pat the dough in the prepared pan and bake for about 22 to 25 minutes, or until firm.
